It is perfect accompanied with your choice of protein (salmon and chicken are my favourite, or try tempeh for a plant-based protein). I often make extra so I can enjoy it for lunch the following day.<\/p>\n<\/div>\n<h3>Ingredients:<\/h3>\n<div class=\"cooked-recipe-ingredients\">\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">1\/2 pumpkin, cut into 2cm cubes<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">6 cups kale, stems removed<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">1 ripe avocado, cubed<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">1\/4 cup pumpkin seeds<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">Pinch himalayan salt<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-amount\" data-decimal=\"1\">1<\/span>\u00a0<span class=\"cooked-ing-measurement\">tsp<\/span>\u00a0<span class=\"cooked-ing-name\">Pinch himalayan salt<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-heading\">Tahini Dressing<\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-amount\" data-decimal=\"2\">2<\/span>\u00a0<span class=\"cooked-ing-measurement\">tbsp<\/span>\u00a0<span class=\"cooked-ing-name\">tahini<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">1\/2 squeeze lemon<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-amount\" data-decimal=\"1\">1<\/span>\u00a0<span class=\"cooked-ing-measurement\">tbsp<\/span>\u00a0<span class=\"cooked-ing-name\">olive oil<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-amount\" data-decimal=\"1\">1<\/span>\u00a0<span class=\"cooked-ing-measurement\">tbsp<\/span>\u00a0<span class=\"cooked-ing-name\">water<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">Pinch himalayan salt<\/span><\/div>\n<div class=\"cooked-single-ingredient cooked-ingredient\"><span class=\"cooked-ingredient-checkbox\">\u00a0<\/span><span class=\"cooked-ing-name\">1-2 chopped garlic cloves (optional)<\/span><\/div>\n<\/div>\n<h3>Method:<\/h3>\n<div class=\"cooked-recipe-directions\">\n<div class=\"cooked-single-direction cooked-direction cooked-direction-has-number\" data-step=\"Step 1\"><span class=\"cooked-direction-number\">1<\/span><\/p>\n<div class=\"cooked-dir-content\">\n<p>Preheat oven to 200\u00baC. Place pumpkin on baking tray and drizzle with olive oil, salt and tumeric . Toss together roughly and place in the oven for about 25-30 minutes.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction cooked-direction-has-number\" data-step=\"Step 2\"><span class=\"cooked-direction-number\">2<\/span><\/p>\n<div class=\"cooked-dir-content\">\n<p>Wash kale and then tear small pieces off the stems, discarding the stems. Lightly steam the kale leave for 5 minutes to soften them. Add kale, pumpkin, avocado, pumpkin seeds into a bowl.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction cooked-direction-has-number\" data-step=\"Step 3\"><span class=\"cooked-direction-number\">3<\/span><\/p>\n<div class=\"cooked-dir-content\">\n<p>Combine all dressing ingredients together. Drizzle over salad, toss salad around and serve.<\/p>\n<p>Note:\u00a0I like my dressing a little thicker so often add extra tahini, if you prefer it thinner add a couple more splashes of olive oil or water.<\/p>\n<\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>This is my favourite simple go-to salad which I&#8217;ve been enjoying for many years.
